Christmas Curley Kale (Hallandskål)

Traditional Christmas dish from southern Sweden which is a tasty alternative for the festive table. Best with stock from your christmas ham.


Ingredients:

  • 2 stems of good sized culey kale
  • (you can also use frozen curley cale but not as good)
  • 4 dl of christmas ham stock (other stock if not available)
  • 2 tbs butter, approximately
  • 5 tbs whipping cream
  • 1/4 tsp ground white pepper
  • 1/4 tsp brown/demarera sugar

Instructions:

This recipe is for 4 Chop leaves of curley kale but not tiny pieces.It all shrinks together when cooked. Bring ham stock to the boil (check that it is not too salty) Simmer without lid until stock has melted into the curley kale. This can take 20 mins. Add butter to frying pan or other shallow vessel and let it gain colour. Toss curley Kale into the pan and fry lightly. Mix in cream and spices to taste. Serve hot.
